Greenland Halibut with Creamy Dill Mushroom Sauce
This wholesome dish is a must! This creamy dill & mushroom sauce really elevates the Greenland halibut and accentuates its delicious mild taste. Perfect served over rice pilaf to soak up the wonderful sauce.
INGREDIENTS
- 2 tbsp. butter
- 1 1/2 cup mushroom, sliced
- 1 medium onion, finely chopped
- 3 cloves of garlic, minced
- 2 tbsp. flour
- 4 tsp. dried dill
- 1 tsp. dried thyme
- 1/2 tsp. salt
- 1/8 tsp. white pepper
- 1 cup milk
- 1/2 cup sour cream
- 2 tsp. lemon juice
- 1 tsp. lemon zest, grated
- 1 1/2 lbs (650g) Greenland Halibut
METHOD
- Preheat oven at 350F. Greasy large casserole style baking dish with nonstick cooking spray. Set aside.
- Melt butte in a medium saucepan over medium heat. Bring to a sizzle.
- Add sliced mushrooms, chopped onions and minced garlic. Cook and reduce for 10 minutes while stirring until vegetables are tender.
- Add the flour, thyme, dill, salt and pepper and continue cooking for 2 minutes.
- Add the milk and sour cream. keep tiring while cooking until sauce becomes smooth, thick and creamy.
- Remove saucepan from heat and add lemon juice and zest. Let sauce rest.
- Take the casserole style baking dish, add the Greenland Halibut and top the fillets with the creamy mushroom dill sauce from the saucepan.
- Bake for 15 to 20 minutes or until the Greenland Halibut flakes easily with a fork. Serve immediately over rice pilaf to soak up the delicious sauce.
